A1.1 — L1: Welcome to Your Kitchen!

Kitchen basics decide whether cooking feels calm or chaotic. Before any recipe, a cook needs a small set of tools and, more importantly, a small set of habits.

Elio, the Mondosol cooking mascot, preparing pasta

What you will learn in this lesson

Elio introduces the eight fundamentals: mise en place, the discipline of prepping everything before the heat goes on; the few tools genuinely worth owning; why separate cutting boards matter; and the two habits — cleaning as you go and tasting as you cook — that experienced cooks do automatically and beginners almost never do.

  • Mise en place 🧑‍🍳 — everything prepped before you start cooking
  • Chef’s knife 🔪 — one good knife beats a drawer of bad ones
  • Cutting board 🪵 — separate boards for raw meat and vegetables
  • Wooden spoon 🥄 — will not scratch pans or conduct heat
  • Heavy pan 🍳 — thick base spreads heat evenly
  • Kitchen scale ⚖️ — baking is chemistry, not guesswork
  • Clean as you go 🧽 — the habit that separates calm from chaos
  • Taste as you cook 👅 — season in layers, not at the end

Why Kitchen basics matter

Most beginner cooking disasters are not caused by bad recipes. They are caused by starting to cook before everything is ready, then panicking halfway through, and by seasoning only at the end when it is too late to build flavour. Fixing those two habits in the first lesson improves every dish you make afterwards, regardless of what you are cooking.

Practice questions

The interactive card above ends with a short quiz. Here are the questions so you can review them afterwards — try to answer before checking the word in brackets.

  • What does “mise en place” mean? (Everything prepped before cooking)
  • Why use separate cutting boards? (To avoid cross-contamination)
  • Why is a heavy-based pan better? (It spreads heat evenly)
  • When should you season your food? (In layers as you cook)

How to practise

Before your next meal, prep every ingredient into small bowls before turning on the heat. Repeat the card once a day for three days: short, frequent sessions beat one long session. Every completed lesson earns you 10 Mondi, and finishing the quiz earns 20 more.
