A1.1 — L2: Kitchen Danger Zones


Kitchen safety is not about being nervous in the kitchen. It is about knowing the small number of situations that actually cause harm, so you can stop thinking about the rest.

What you will learn in this lesson

This lesson covers the temperature danger zone where bacteria multiply, cross-contamination between raw and ready food, safe knife and pan handling, what to do about an oil fire, the core temperature that makes chicken safe, and the two rules that catch most people out: cooling leftovers quickly and defrosting in the fridge rather than on the counter.

Why Kitchen safety matter

Food poisoning at home is far more common than most people assume, and it almost always traces back to one of these eight points. None of them require special equipment or slow you down — they are simply defaults. Once they are habits you never think about them again, which is exactly the point.

How to practise
