Hand washing in the kitchen is the highest-impact habit in food safety, and the one most people perform badly — a three-second rinse that moves bacteria around rather than removing it.

Why Hand washing in the kitchen matter
Public health research consistently finds hand washing to be the single most effective intervention against foodborne illness, ahead of almost anything else a home cook can do. It is also free and takes twenty seconds. The gap between knowing this and actually doing it properly is where most home food poisoning lives.
